The boys and I made some monster sandwich cookies for a bake sale! A little fun in the kitchen!

Today, we’re going to have a little fun here. I’m hosting a virtual bake sale with a team of 5 other bloggers competing (friendly!) against five other teams of bloggers with our sponsor, McCormick. Onto the bake sale and what we made!

Monster Chocolate Sandwich Cookies!

George and I made the Chocolate Candy-Coated Cookies while Henry was at school.

It’s so much fun to bake with him! He gets to dump everything in, and most importantly, he gets to crack the eggs! He begs to do this and he’s impressively good at it! (Scared to have young kids crack eggs? Read this from NutureStore.)

We based our recipe off of McCormick’s Chocolate Mocha Chunk Cookies.

Since my kids are not fans of coffee or mocha, we skipped that flavor and added in McCormick’s Vanilla Flavoring instead. We also substituted the chocolate chunks and walnuts for our favorite candy-coated chocolates.

I also whipped up some orange-flavored buttercream using McCormick’s Orange Flavoring (inspired by McCormick’s Whipped Vanilla Buttercream recipe) while George was taking a nap.

I’ll share our recipes below at the end of this post.

Then… When Henry got home, we set up an assembly line.

George spread the orange buttercream frosting onto the bottom of a cookie. And sandwiched it with another cookie.

Sometimes I’d have to plop a good blob of it onto the cookie because George tends to scrape most of it off (he does that when he makes his own peanut butter and jelly sandwiches too).

I would then squeeze the cookies together on the back side to have one side of the sandwich cookie opened wider than the other. This make it look like a big mouth!

I set up Henry up with a pastry bag (just a sandwich baggy with a little hole cut in the corner) and he’d squirt two little dots onto the top of the sandwich cookie that George made. Close together and near the side of the sandwich that’s opened wide.

And then he’d stick the candy-coated chocolates onto the buttercream dots to make monster eyes! (These could be one of the monster activities!)

Monster Chocolate Sandwich Cookies

Candy-Coated Chocolates Chocolate Cookies:

  • 2 cups flour
  • 2/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup butter (softened)
  • 1 cup granulated sugar
  • 2/3 cup light brown sugar (firmly packed)
  • 2 eggs
  • 3 tsp McCormick’s Pure Vanilla Extract
  • 2 cups candy-coated chocolates

Preheat oven to 350°F. Stir together flour, cocoa powder, baking soda and salt in medium bowl. Set aside. Beat butter and sugars in large bowl on medium speed until light and fluffy. Add eggs and coffee extract; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in candy-coated chocolates.

Drop by rounded tablespoons about 2 inches apart onto baking sheets sprayed with nonstick cooking spray. Bake 8 to 10 minutes or just until cookies are set. Cool on baking sheets 2 minutes. Remove to wire racks or cut open paper sack and cool completely.

Orange Flavored Buttercream:

Beat butter in small bowl with electric mixer on medium speed until light and fluffy. Add orange flavoring and mix well.

Gradually beat in confectioners’ sugar, beating until well blended after each addition, frequently scraping sides and bottom of bowl. Add milk; beat until light and fluffy. If frosting is too thick to spread, gradually beat in additional milk. Stir in food coloring to get desired color intensity. Store in refrigerator up to 2 weeks. Rewhip before using.
